It’s Tomato Time! What Are Your Favorite Recipes?

We just grew a little garden this year, with cherry tomatoes, basil, green beans and jalapenos. But tomatoes of all kinds are at the Farmer’s Market, and I’m wondering what your favorite tomato (or other fresh produce) recipes are right now.

 

Caprese salad: 

This is my favorite use of both red and yellow fresh-picked cherry tomatoes, small fresh mozzarella balls, basil leaves, cracked pepper and local olive oil.

Spanish Romesco Sauce:  I haven’t tried this one yet, but sometimes the food descriptions themselves are so delicious they make you hungry for experimentation:

“Searing tomatoes boosts their sweetness and flavor and is key to this piquant sauce from Spain. Pan sauté or slow roast several tomatoes in an oven with a whole head of garlic. Toss them in a blender with almonds, olive oil, and a splash of balsamic vinegar, and you've got Romesco sauce, a Catalonian classic.”

Add watermelon for a sweeter soup with even more lycopenes.

​Gazpacho: 

This chilled soup is best made with fresh and very juicy tomatoes, using a 3:1 ratio of tomatoes to other ingredients, such as  bell peppers, onions, and cucumbers. 

I’m waiting to hear what side pocket does with all of his bounty!
